It doesn’t get any simpler, right? Why bother making pudding from scratch when you can just open a packet, stir, and call it a day?
I’ve never been a great cook. But I always wanted to be a mom — and in my imagination, I saw myself smiling in a cozy kitchen, cooking side by side with my happy little kids.
Let’s just say… reality didn’t exactly match the dream.
That’s why I’m a big fan of quick meals. I try (as long as my nerves allow) to involve my kids in the process. From time to time, pudding shows up for dinner. It’s not the most nutritious meal, but I never add sugar — so that counts for something, right?
And then one day, it happened.
Let’s just say it wasn’t one of our best days. The kids weren’t cooperating, and I kept checking the clock every five minutes, counting down to bedtime. Desperate for a distraction, I offered pudding. The kids lit up — and I felt instant relief. Finally, a survival plan for the next 30 minutes.
We ran to the kitchen. I started digging through the pantry like a raccoon in a dumpster… and realized we were out of pudding mix. Panic mode activated.
Okay, think. I’ve got potato starch. That’s basically what pudding is made of, right?
And that’s how it all began — the Homemade Pudding Experiment.
It took maybe 30 seconds longer than the boxed one, and honestly? Totally worth it. The taste was unreal — creamy, smooth, comforting — and best of all, I knew exactly what was in it.
Not to brag, but I’ve never had better pudding in my life.
Homemade Pudding Recipe (Makes about 2–3 servings)
Prep time: 5 min
Cook time: 10 min
Servings: 3 (about 7 oz each)

Ingredients:

2 cups whole milk
 - 
4 tablespoons potato starch
 - 
1 tablespoon all-purpose flour
 - 
1 egg yolk (optional, but highly recommended)
 - 
1 teaspoon vanilla sugar (or regular sugar + a drop of vanilla extract)
 
Tip: I make my own vanilla sugar — I keep a vanilla bean in a jar of cane sugar for a few months. Smells heavenly.
Directions:

Pour 1¾ cups (about 420 ml) of milk into a saucepan and heat over medium heat.

In a separate bowl, whisk together the remaining ¼ cup milk with both flours, egg yolk, and sugar.
 - 
Once the milk starts to simmer, pour in the mixture and whisk constantly until it thickens and bubbles.
 - 
Remove from heat and pour into bowls.
 
My favorite version:
Put a few slices of banana at the bottom of each bowl, then sprinkle a little chopped dark chocolate on top — one square of chocolate is enough for all three portions.
The result? A thick, creamy pudding that tastes like a cozy evening hug in a bowl.
